1/2 c. margarine (room temperature)
1 c. sugar
2 eggs (room temp.)
3-4 bananas (very ripe, softened)
1 t. vanilla
2 c. flour (all purpose)
1 t. soda
1/2 t. salt
1 c. chopped pecans
1/4 - 1/2 c. brown sugar
With mixer at low speed, blend together margarine, sugar, eggs, bananas and vanilla.
Add flour, soda and salt
Fold in chopped pecans
Pour into 9x5x3” oiled loaf pan.
Sprinkle top with brown sugar.
Pat into batter.
Bake almost 1 hour at 350.
Cool and remove from pan.
